I’m swamped probably like everyone else this week, but I wanted to share this recipe with everyone. I made Mint Oreo Truffles yesterday, and they were pretty darn good. The best part? Minimal ingredients!!!!

1 whole package of mint Oreos
1 8oz package of cream cheese at room temperature
12 oz good quality semi sweet chocolate
! also used white chocolate melting chips and dyed the product green. Also use whatever sprinkles or toppings you want.
~Pulse the oreos in a food processor until they are a fine crumb.
~Transfer mix into a large bowl and fold in cream cheese. If you have a mixer with a paddle attachment, use that. I just used a spatula.
~Now, get messy! Roll the mix into about 1 1/2 tablespoon size balls. Transfer the balls to a lined baking pan.
~Freeze the balls for at least 30 minutes. Sally is right this is essential! You need the mixture to be cold enough for when you roll it in the melted chocolate. If you don’t, it will fall apart.
~Chop up the chocolate and put into a double boiler. Melt the chocolate on low heat, stirring.
~ Once the chocolate is ready, take the balls out of the freezer and get ready to roll.
~This is of course where you need to be patient. One at a time, roll a ball in the chocolate and take it out with a fork. Do not stab it! Just scoop it out, and tap it on the side until most of the excess chocolate is off.
~Transfer the ball to a lined pan or plate, and decorate. I drizzled the white chocolate with a whisk. Just stir it up a bit, dip the whisk in, and quickly drizzle it over the truffle. Leave it as that, or decorate with sprinkles.
~Once you have finished I put them in the fridge until I was ready to box them.
These are almost more like cookie balls, but so so rich. So far, they have been a hit in our house, and a couple of our neighbors. Here is my finished product:
